Plentiful rain has fostered a blue haze of chicory along summer's country roads and dirt lanes. For some reason, its deep tap root and sturdy stem and leaves favor roadsides over fields, perhaps because most roads drain water to their gravely sides and so foster the plant. A native of Europe, the leaves of this introduced plant can be used for salads and its root can be baked and ground into a decaff coffee substitute.
Its abundant blue blossoms attract many bees as well as the eye as we cruise out Bow Wow Road and along the Egremont Sheffield Road, especially in morning when the new blossoms open.
